This kale salad is super easy to make and very much nutrient dense. Pair it with your favorite protein for a perfect lunch or dinner. This is a wonderful side for the holiday table as well.
1/2 bag of kale (about 8 -10oz)
1 package of cubed butternut squash (16 oz)
1 large shallot
1/4 cup of pumpkin seeds (optional)
Olive oilPink salt/pepper
1 tsp of Dijon mustard
1/4 cup of good olive oil
1 large lemon
1/2 tsp of pink salt
Take a standard sheet pan and line it with parchment paper. Add squash and sliced shallots and toss in olive oil. Add salt and pepper to taste. Roast at 400 degrees until butternut squash is tender and looks golden. Take it out and cool to room temperature.
Mix dressing ingredients and pour over kale. Massage well until kale is soft. Set aside. Do this while butternut squash is cooling.
Slowly combine butternut squash with kale salad and sprinkle pumpkin seeds on top.
