I got an inspiration the other day from one of my nutrition school friends Lina to make the hummus with beets and beans. How beautiful is this color? And the taste is out of this world!

Beets are one of the world's healthiest foods. They have antioxidant, anti-inflammatory and detoxification properties and they are rich in protein and fiber. Many studies have shown that diet rich In beets can even minimize different tumors and cancer cells. Talk about one powerful veggy!

There are many ways to enjoy beets: juice them, pickle them, use them in baking (instead of food coloring) or enjoy them in the hummus form. 


13 oz package of cannellini beans or garbanzo beans
1 medium size beet (about 1 cup roughly chopped; cooked and peeled)
1 large garlic clove
2 tbs of organic tahini
1/4 ts of Himalayan salt
2 TBS of avocado or olive oil


Blend well and enjoy!
