Who loves crepes? We love them in our house! Here is what I did to make our fave dessert bit healthier:

1. I replaced milk with sparkling water (usually i make the original ones with either 100% milk or half milk and half sparkling)
2. I replaced the white flour with rice & buckwheat flour
3. Added some vanilla extract

Cooking Time



1 egg

1/4 cup of rice flour

1/4 cup of buckwheat flour

3/4 cup of sparkling water

1 tsp of vanilla extract

Almond butter, chocolate spread & berries for toppings


Recipe as follows: beat 1 egg and add 1/4 cup of white rice flour and 1/4 cup of buckwheat flour. Stir until combined and add 3/4 cup of sparkling water. Mix and see how thick the batter is (it should be little thinner then for your regular American style pancakes); Add 1 tsp of vanilla extract and stir. 

Bake crepes the usual way in your crepe or pancake pan.

Layer on your toppings, drizzle some honey if desired and enjoy!

For a savory version, add some cream cheese (or dairy free spread) and some ham. Also delicious!
