Garbanzo Bean Salad

This salad is so easy to make and it stores well for few days. You can have it as is or you can add your favorite meat protein to it. I love it with grilled chicken or canned tuna.


1 large can of garbanzo beans (29 oz)

3/4 pint of cherry tomatoes

3-4 mini cucumbers (1 large English)

3 scallions (chopped)

Handfull of fresh parsley (roughly chopped)

Dressing: 1/2 tsp of pink salt+ 1/8 cup of olive oil + 1/2 lemon

Optional: sheep feta cheese and kalamata olives


Mix the olive oil, lemon and salt and combine with other ingredients. Enjoy!
