Easy Slow Cooked Chicken With Peppers

During the weekdays, it is all about quick, easy but healthy meals for my family. On of my favorite kitchen appliances to use during the week is the slow cooker. Slow cooked dinner usually take less then 20 minutes to prepare and then it's all about the slow cooker! Who would not want to come home to a warm dinner from work?

This recipe is really easy and it is absolutely delicious. You can also add black beans to it if you would like to make it even more hearthy.

Cooking Time

6 hrs on low




3 organic chicken breast

1 medium onion

3 peppers - red, yellow/orange and green

2 oz of green chili peppers (1/2 small jar)

16 oz jar of salsa (medium spicy)

1/3 cups of water

1/3 cup of vegetable broth

1 tbs of olive oil

Salt and pepper (to taste)


Layer 1/2 jar of salsa on the bottom of the slow cooker. Add chicken breast, salt and pepper (to taste - I used 1/2 tsp of pink salt and dash of black pepper). Layer chopped onion then peppers on top of chicken. Again, salt and pepper to taste (I used about 1/2 tsp of pink salt). Add rest of salsa as well as green chilies (i used 2 oz but if you like spicy, you may use the whole can which is 4 oz). Add vegetable stock, water and 1 tbs of olive oil on top. Cover and set on low for 6 hours.


There are endless possibilities as to what to pair this dish with. We had it with some spiralized zucchini. You may also serve it over bed of jasmine or brown rice or wrap it up in your favorite tortilla. Enjoy!
