For me here one of the most comforting dishes during the colder months of the year is mashed potatoes. I was so thrilled when someone came up with the mashed cauliflower concept because for me this means I can have it all the time! There are so many recipes out there, and I definitely tried a few. This is my version of the cauli mash and it is perfectly creamy, garlicky and hearthy. I hope you will like it as much as I do!
2 heads of cauliflower
3 handfuls of fresh spinach or kale
5-6 garlic cloves
1 tsp of pink Himalayan salt
1/2 tsp of black pepper
1/2 tsp-1 tsp of garlic powder
2 tbs of ghee or grass fed butter
Place the cauliflower and garlic in the pot and cover with water. Cook until cauliflower is tender. Drain and reserve about 1 cup of water (you will use this in case you need more liquid when you blend it). Blend in the high power blender until smooth.
Heat up some olive oil in a pan and add spinach or kale. Sautee for a min or so until greens start to wilt. Add the blended cauliflower and mix until combined. Add salt, garlic powder and black pepper. Cover and cook for the next 15 min or so until all is well combined. At the very end stir in 2 tbs of ghee or grass fed butter.
Serve with your favorite protein and enjoy! I love to pair it with scallops (as pictured) or with steak.
This is also a wonderful side dish for Thanksgiving if you would like to swap the traditional mashed potatoes.
